We are a quick-service restaurant that serves nutritious food in the form of tasty burritos, bowls, salads, smoothies, juices and home-made cookies. We are dedicated to making wholesome food accessible to regular folks with time constraints, keeping it affordable, fun and socially responsible. We have six locations in Portland.
Sustainable Qualification Summary
Our Portland locations are now operating in a “hub-and-spoke” system of food preparation and supply, which helps reduce our overall energy footprint. Our commissary is the hub that prepares our soups, sauces and proteins, and the cafes prepare, steam and present the finished product. We use a bio-diesel delivery truck to disperse the freshly prepared items on a daily basis. Our locations of neighborhood “satellites” mitigate traffic and encourage local interdependency (support for local schools and neighborhood events, etc.) We have a strong commitment to reducing waste on all levels, and we have initiated composting at all locations. Wherever possible we use the latest substitutions for products that are normally wasteful in production and disposal, which includes compostable paper products,cornstarch based cups,and potato starch-based materials. In designing our cafes, we have a strong preference for the re-use of existing materials and for the repair of equipment rather than disposal.
