Homemade cookies delivered right to your door by bike! What could be better?
Cookie Pedalers is a baking and biking business in the Portland, OR. area that takes pride in being one of the green businesses in the region. One late-night cookie craving inspired the idea of creative cookies by bike.
The Chai Sugar was one of their first cookies made and the response they got from it inspired them to create the 10 unique varieties on their current menu.
For this recipe we take a classic cookie and add our own spicy spin!
CHAI SUGAR RECIPE
DRY
2 cups flour
¼ teaspoon salt
½ teaspoon baking powder
¼ teaspoon cinnamon
dash of nutmeg
WET
½ cup butter
1 cup white sugar
½ teaspoon vanilla
1 large egg
2 Tablespoons liquid Oregon Chai
Preheat the oven to 350 degrees.
Combine dry ingredients and set aside.
Cream butter and sugar together until fluffy, then mix in vanilla, egg, and chai. Slowly add dry ingredients.
Form the dough into a ball, wrap in plastic or wax paper, and refrigerate for at least 1 hour.
Place dough on a well-floured surface and roll the cookies out to about ¼ inch thickness and cut out with a cookie cutter or the top of a juice glass.
Bake at 350 for about 10 minutes. Cookies will be light in color, and may be slightly brown around the edges. They will be soft to the touch, but will harden as they cool.
Enjoy as is, or ice with our Chai Icing
CHAI ICING
3 Tablespoons meringue powder*, OR 2-3 egg whites
4 cups powdered sugar
6 Tablespoons liquid Oregon Chai, slightly warmed
Sift powdered sugar into a mixing bowl and add meringue powder, or 2-3 beaten egg whites. Warm chai for a few seconds in the microwave and slowly add to the sugar mixture.
If using a stand mixer, use your paddle attachment. Beat for 5-7 minutes until peaks form.
Cover when not in use, as icing air-dries quickly. Leftover icing can be kept in the refrigerator for your next batch.
*you can find meringue powder at most specialty stores with a baking section, such as Jo-Ann’s or Michael’s
